Barbie doll cake is pretty much every girl’s dream birthday cake where the princess gown is made of cake icing and an actual Barbie doll is used as model.
Every girl deserves a princess birthday at least once in her lifetime. It’s in our genes that we fantasize about a fairyland or being like princess and of course being treated like one. So, I decided to gift a small little princess this time on her 2nd birthday with a Barbie Doll cake which looks just like her.
Barbie doll cake is baked like any other sponge cake depending upon your choice of flavor but I prefer making basic vanilla sponge as this flavor gives us options to decorate the gown of our princess with any frosting of our choice. Whoever sees this cake the first question that comes to their mind is how the doll got that perfect shape of a gown. You can easily make the ball gown shape with a ready made gown shaped mould that you get in the market or even can shape the round sponge into a beautiful princess gown with some knives skills. Barbie doll cake can be made egg less or with egg depending on your choice. Here I will be sharing the one made with eggs.
One more variation I did is this that my recipe for this Barbie doll cake is calorie free because there is no butter.. Yes! No Butter. So, you can grab as many pieces you want without thinking too much about those calorie counts.
Tip: Using cake gel will make your cake sponge more spongy. |
Tip: You can use any flavour (pineapple, strawberry, chocolate, butterscotch)for frosting as per your choice. |
Tip: For making the same cake into chocolate flavour reduce per 50 gms maida over coco powder. |
Tip: Use ball shaped mould for making sponge for the cake to give that perfect princess dress gown shape. |

Method for making Barbie Doll Cake
- Sieve the flour, baking powder and soda bi-carb together.
- Mix the sieved ingredients, sugar, eggs, Water, cake gel, salt and beat well with an electric beater.Add vanilla essence.
- Pour the mixture into a greased and dusted cake mould.
- Bake in a hot oven at 200°c (400°f) for 10 minutes. Then reduce the temperature to 150°c (300°f) and bake for a further 10 minutes.
- The cake is ready when it leaves the sides of the tin and is spongy to touch. When ready, take out from the oven and leave for 1 minute and unmould.
- Once the cake is cooled down use a serrated/bread knife to trim the base and cut a hole at top to make space for barbie legs to fit in there.
Decorating the Barbie Doll Cake
For Preparing pineapple icing
Whip cream with sugar and vanilla until stiff peaks form.
I used two colors, white and pink to decorate the cakes.
Attach a star piping nozzle to the piping bag and fill with 3/4 of the white cream.
Squeeze cream into bowl until you get an even ‘flow’ through the nozzle.
Pipe star in triangular or vertical way, leaving gaps for the pink cream also.
You can decorate the entire cake using two colors in any design you like. It could be flier, rosette or just a overlapping in and out.
You can make bodice for the doll with same cream, a fondant or even colorful sprinkles.
Once the doll bodice is done you can fit in her legs in the cake and you’re ready to go. 🙂
